Blackened Redfish with Garlic Butter Veggies

Ingredients:
4 redfish fillets, thawed & pat dry
2 tbsp blackening seasoning
1 tbsp olive oil
1 tbsp butter
2 cups mixed vegetables (zucchini, bell peppers, onions)
Lemon wedges, for serving
Instructions:
Rub thawed fillets with blackening seasoning.
Heat olive oil in a pan over medium-high and sear fillets skin-side down for 3–4 minutes, then flip and cook another 2–3 minutes.
In a separate pan, sauté veggies in butter until tender.
Serve redfish over veggies with a squeeze of lemon.
